Chicken Meatballs

Ingredients

For the Meatballs:

  • 1 lb ground chicken
  • 1 tablespoon italian seasoning
  • 1 tablespoon coconut flour
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

For the Breading:

  • 1/2 cup almond flour
  • 1 tablespoon italian seasoning

For the Marinara Sauce:

  • 8 oz can tomato sauce
  • 1/4 cup tomato paste
  • 1/4 cup water
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions 

For the Meatballs:

1. Heat oven to 400 degrees. Mix all the meatball ingredients together until well combined.

2. In a shallow dish, combine breading ingredients. Form meatballs into bite-sized balls and roll in breading until covered. Place onto lined baking sheet.

3. Place in the oven and cook for 15 minutes. Flip and bake for another 8 minutes. 4. Turn broiler to high and cook for another 2 minutes, or until meatballs are lightly browned and crispy. 

Marinara sauce:

1. Combine all ingredients in a sauce pot. Cover and simmer on low for 5 minutes.
