Very Berry Muffins


  • 1 cup almond flour
  • 3 tablespoons coconut flour
  • 1/8 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3 tablespoons coconut oil or grass fed butter, melted
  • 2 eggs
  • 3 tablespoons honey
  • 1 banana, mashed
  • 1/4 cup blueberries
  • 1/4 cup raspberries


Preheat oven to 350 degrees F and line muffin tin with liners or spray with non stick cooking spray.
In one bowl combine almond flour, coconut flour, baking soda, and salt.
In a separate bowl combine eggs, melted coconut oil or butter, honey, and mashed banana and mix well.
Combine wet and dry ingredients then fold in blueberries and raspberries.
Bake for 20-25 minutes or until a toothpick comes out clean. Enjoy!
